Fermenting Fish Sauce

Fish sauce is a condiment made from fish or krill coated with salt, and fermented for up to 2 years. It is a staple seasoning used in East Asian cuisines. At a fish sauce factory in southern Vietnam, fish sauce is fermented in rows of clay urns. The urns are capped with covers with a diversity of different colours. The colours of these covers are sometimes used to indicate different batches of fish sauces.
